La selección: Arriba Nacional – the famous fine flavour cocoa which only grows in Ecuador and possesses a particularly mild, floral aroma, was the bean of choice by the Seversal family corporation. It's a super selection, the best of the best, directly from the source, and Zotter transformed it, bean to bar, into a flowery single origin chocolate bar with a 75% cocoa content using the newly developed SNR roasting method. This procedure works by injecting water during the roasting process, which becomes a fine mist that in turn decreases the temperature, making for a gentler roast as well as highlighting the cocoa's flavour spectrum even more intensely. Dr. Juan Salinas is head of a German-Ecuadorian family corporation Seversal. He himself is from Ecuador, knows the best cocoa producers in the Los Rios region well and visits them personally in order to choose and acquire the best Arriba beans - those rare, fine cocoa beans growing only in Ecuador. It is a very special and exceptional selection, of course, all organic and fair trade, and it reflects the family's entire attitude and business motto: cocoa in the family tradition, acquired through direct trade and without intermediaries.
Arriba Nacional has a very subtle, floral aroma with hints of nuts, coffee and vanilla, and it is transformed at Zotter's bean-to-bar manufacture into a sublime single origin chocolate with 75% cocoa content.
