Cacaosuyo - Dark Chocolate - Piura Select 70%Cacaosuyo
Cacaosuyo has crafted this chocolate from rare “piura” cocoa beans they discovered growing deep in the Peruvian rainforest in Piura province, 4 degrees south of the equator. These Piura beans are also known as “Porcelana” (porcelain) because of their distinctive pale white colour (white criollo) when they are first harvested. Made with just two ingredients, it’s a wonderful illustration of the range of flavours hidden within the cacao bean.
ORGANIC PERUVIAN CACAO, ORGANIC CANE SUGAR
Sweet & smooth like milk chocolate but with undertones of fresh woody herbs and some citrus, which distinguishes it from the outset as dark chocolate. Slow to melt, taking you on a journey of flavours. Starts off dark, cocoa and nutty flavours. Little bursts of lime and orange, and then spicy clove and cinnamon, with a refreshingly sweet aftertaste. It smells sweeter than it tastes: floral, walnut, wood, and molasses. The flavour itself is resinous and sappy like some kinds of dark roast coffees, with a yeasty tone.
